bumGenius 4.0

Just thought Id update on our new adventure into all-in-one cloth diapers. Since I liked the bumGenius 3.0 diapers so much I decided to order the bumGenius 4.0 and check it out. It works really well! I also love that it is adjustable and is a one size fits “all” diaper. The bumGenius 3.0 diapers we got were in size Large as Jacob is getting a little big for the mediums. I love the way they stretch on the sides for a great fit. So, yeah a good investment I think. New Recipe – Baked Ranch Chicken

I have been following the weekly homemakers challenge at http://www.joyfulmothering.net/. I am going to attempt to link up to her page but for now..heres my new recipe. I got this recipe from my neighbor Judy.

Baked Ranch Chicken

1 1/2 lbs. boneless skinless chicken breast
1/2 cup butter (melted)
1 pkg Hidden Valley Ranch seasoning mix
1- 2 cups crushed crackers

Preheat oven to 350 degrees. Clean Chicken and pat dry. (I cut the chicken breasts in smaller pieces bit you could easily do them whole.) Coat chicken in melted butter.

Mix Ranch seasoning with crushed crackers to make chicken coating. Coat chicken peices one at a time in crushed crackers. For a buttery flavor you can use Ritz crakers. I actually used 1/2 oyster crackers and 1/2 garlic croutons chopped in the food processor and it turned out really well.

Place chicken in a 9 X 13 pan coated with non stick cooking spray. Bake on 350 degrees for 30-40 minutes.

The finished product.. moist chicken breast inside, crispy, buttery coating outside! I served with corn, homemade noodles, gravy and crescent rolls. Everyone seemed to enjoy it even my 3 year old who is a rather picky eater. Left overs were good on a sandwich too but lost their crispiness. This recipe was quick and easy to make and may find its way onto our table again soon.

New Diapers

I have to share my first experience with All- in -One diapers. I used disposables with our older daughter, cloth diapers were barely a fleeting thought. I had several ill fated attempts with our younger daughter. However Mowgli on the other hand will be a year old in a few weeks and we are still using cloth diapers with him. Up until this point we have used prefolds with covers. We’ve used mostly the Bummi Super Whisper Wrap which have been really great. I was placing an order at http://www.cottonbabies.com/ – (gotta love free shipping ) for another bag of Rockin’Green when I decided to take a quick look at their clearance page. They had bumGenius 3.0 all-in-one diapers for $9.95! So I decided we’d try them. They are super cute and fit great so I think I am going to order a few more. I also got a bag of the new Funk Rock Ammonia Bouncer and am excited to see how it works. Heres Mowgli cruisin’ around the ottoman in one of his new diapers. So cute!
