New Recipe – Baked Ranch Chicken

I have been following the weekly homemakers challenge at I am going to attempt to link up to her page but for now..heres my new recipe. I got this recipe from my neighbor Judy.

Baked Ranch Chicken

1 1/2 lbs. boneless skinless chicken breast
1/2 cup butter (melted)
1 pkg Hidden Valley Ranch seasoning mix
1- 2 cups crushed crackers

Preheat oven to 350 degrees. Clean Chicken and pat dry. (I cut the chicken breasts in smaller pieces bit you could easily do them whole.) Coat chicken in melted butter.

Mix Ranch seasoning with crushed crackers to make chicken coating. Coat chicken peices one at a time in crushed crackers. For a buttery flavor you can use Ritz crakers. I actually used 1/2 oyster crackers and 1/2 garlic croutons chopped in the food processor and it turned out really well.

Place chicken in a 9 X 13 pan coated with non stick cooking spray. Bake on 350 degrees for 30-40 minutes.

The finished product.. moist chicken breast inside, crispy, buttery coating outside! I served with corn, homemade noodles, gravy and crescent rolls. Everyone seemed to enjoy it even my 3 year old who is a rather picky eater. Left overs were good on a sandwich too but lost their crispiness. This recipe was quick and easy to make and may find its way onto our table again soon.
